PAIRING MENU

Smoked Oyster Soufflé, Tomato-Saffron Emulsion

Coeur Clementine Sparkling Rosé, Provence, France

Dry to the bone, delicate and layered with aromas of fresh berries and spring flowers.

The creamy texture of this sparkling Grenache rosé complements that of the rich and smoky soufflé. The savory accents of the Tomato-Saffron emulsion help to brighten the wine’s red fruit flavors and slightly earthy undertones.

Grilled Oyster with Chipotle Vinaigrette, Frisée & Jicama Salad

Famiglia Pasqua “Romeo & Juliet” Prosecco Brut, Veneto, Italy

Fresh and fruity sparkling wine, with intense aromas of pear and apple.

The bright fruit and palate-refreshing nature of this northern Italian sparkler showcases and contrasts with the outdoor flavors of the grilled oyster and smoky Chipotle spice while complementing the fresh greens and Jicama.

Oyster Shooter Two Ways:

Sake, Ponzu, Sesame, Scallion & Tomato Water

Fresh Grated Horseradish, Lemon-Bay Leaf Foam

Bunny Natural Sparkling Sake

Elegantly sweet with a soft texture from natural bubbles and a crisp refreshing finish.

A Japanese top secret secondary fermentation process for sake (method japonais) was employed to create this small batch, handcrafted sparkling treat. The slightly sweet and delicate flavors of the sparkling sake will lift the savory, citrus and umami elements of each shooter while washing the palate clean to prepare for the next taste.

Corn Dusted Crispy Oyster over Local Sweet Corn and Bacon Chowder

Pierre Sparr Crémant d’Alsace Brut Reserve, Alsace, France

The soft mousse leaves a pleasant feeling on the palate, accompanied by a racy, powerful body and crisp, lemony acidity that brings freshness to this Crémant.

A cuvée, or blend, of Pinot Blanc and Pinot Auxerrois (a relative of Chardonnay), in this traditional method sparkler. Its crisp, fruity and floral characters mirror the natural flavors of the fresh sweet corn, while the rich yeastiness and texture complement the smokiness in the velvety
